About the Role: Food Scientist 

Prime Roots is seeking a Food Scientist to become an integral part of our team creating delicious meat alternatives! This role is cross-functional and we are looking for a multi-disciplinary scientist who has robust expirimental drive and understanding of the scientific process but who is a hands-on application expert creating new food products and scaling them up and bringing them to market. You will have the opportunity to be at the forefront of sustainable and delicious food innovation and be amongst a team of hardworking do-ers. 

What You'll Be Doing: 

  • Spearhead new product development from benchtop to scaling up. 
  • Develop and refine product development and sensory science protocols and methods. 
  • Implement quality control and assurance standards for products. 
  • Innovate on the characterization and functionality of novel protein sources. 
  • Leading projects on sensory evaluation of products and on certain projects 
  • Collaborate with internal and external stakeholders on new projects and initiatives. 
  • Ensure regulatory compliance and product safety and labelling. 
  • Source and evaluate new ingredients for new and existing products. 
  • Manage relationships with suppliers and key development partners. 
  • Coordinate and conduct shelf life, stability, and other product tests. 
  • Own the design, documentation, qualification, of projects.
  • Develop an end-to-end quality assurance system with statistical process controls. Must be proficient in data analysis.
  • Lead continuous improvement efforts in production quality and throughput. 
  • Work on projects across operations and R&D to assist in bringing new products to life as well as improving current products and processes. There is no project to big or too small for this role and it will encompass everything from new product development, to quality, sensory, and process development and everything in between.

Requirements

  • Bachelor's, Master's, or PhD in Food Science, Materials Science, Biochemistry, or a related field. 
  • 2+ years of experience in product development and commercialization. 
  • Experience in meat or seafood processing or alternative meats. 
  • Well-rounded scientist with expertise in textures, material science, and flavors. 
  • Strong believer in the scientific method for solving food development challenges. 
  • Familiarity with food processing equipment and scale-up methods. 
  • Extensive knowledge of sensory methods, consumer testing, and functional proteins. 
  • Expertise in engineering statistics, design of experiments, and quality management systems. 
  • Familiarity with industrial-scale fermentation and/or food manufacturing processes.
